Steak Bruschetta with charred tomato relish & tangy arugula

When deciding the menu, I wanted to make something that I knew was super easy and delicious to make. That way, I could spend more time socializing and less time in the kitchen. How many parties have you thrown and didn’t have time to talk to family and friends because you were too busy cooking and doing other things a good hostess would do? That’s what made this delicious steak bruschetta recipe the perfect dish for our girl’s night. It’s delicious and incredibly easy to make. Even better, you can pair it with a nice, crisp summer salad and voila! More time spent catching up with the girls.

I like to start this recipe out by making the charred tomato relish first. That way I can make sure that everything is ready to top my fresh bread. It takes less than 10 minutes to cook and while it’s cooling you can prep and cook the steak. I just love looking at all of these amazing colors. Every year, I grow cherry, grape and roma tomatoes in my garden. It’s nice that the grocery store has them year- round, but nothing beats a homegrown tomato in the middle of summer. It has such incredible flavor! Ugh, my mouth is watering just talking about it!

And can we also take a moment to appreciate the amazing-ness that is gorgonzola dolce? If you have never heard of it, you’re missing out! Omigosh it’s soooo good. It’s a cheese made from cow’s milk that’s sweet and buttery, nice and creamy. The perfect spread to use for this recipe and it goes great with any number of summer salads.

I don’t say this enough, but I live for my All Clad stainless steel pans. I pop these bad boys in the oven after browning my dish and it’s super easy to clean. I would suggest investing in a good stainless steel set for the kitchen. All Clad is a bit expensive for aspiring kitchenistas, but there are some really good and affordable options out there to get you started.

This turned out great. You have the smoked meaty flavor from the steak and the savory taste of the charred tomato relish. It honestly doesn’t get any better than slicing some banquette bread, popping it in the office and watching all the deliciousness melt to perfection. Why can’t more recipes be this easy?

 

I decided to serve this bruschetta with a delicious sweet green salad with toasted pecans and a homemade honey mustard vinaigrette. To top it off, I served both red wine which goes good with the smoky steak flavor and a white wine to pair with the salad. You can’t go wrong with having plenty of wine on hand.

There you have it. A super simple menu for one amazing night with friends.
