I had been hearing about Spaghetti Squash for a while now and had wanted to try it. Luckily, both my coworkers had experimented with it and gave me a recipe for the dish that turned out awesome! It was actually very easy to make and something that can be easily manipulated and served with whatever you want. The recipe I tried out as a beginner is below and was delicious! My hubby even loved it so I will definitely be making it again! If you test out this recipe let me, know your thoughts!
Spaghetti Squash

Ingredients
- Ingredients
- 1 medium heavy spaghetti squash
- 1 Small onion chopped
- 4 cloves garlic diced
- 1 ½ Tbsp. Tomato paste
- 1 Can of diced tomatoes
- Coconut Oil
- Salt and pepper (to taste)
- Fresh lime to squeeze (just a little)
- 1 tsp. Italian season (to taste)
Instructions
- Squash Directions
- 1. Cut in half, scoop out seeds
- 2. Stab with fork all throughout the inside
- 3. Take a spoon full of coconut oil and rub all inside and on rim
- 4. Salt and pepper the inside
- 5. Squeeze a little lime on the inside
- 6. Put on cookie sheet meat side up (just balance them against each other)
- 7. Put in oven at 400 for about 1 hour – to 1 hour 5 min
During the time in the oven make sauce
- Sauce Directions
- 1. Scoop some coconut oil in pan
- 2. Place onion in pan and start to sauté (get them soft)
- 3. Add garlic to onion (be careful not to burn)
- 4. Sprinkle about a teaspoon of Italian seasoning into the pan and toast it with the onion and garlic for a few seconds
- 5. Add the tomato paste and stir all of it together. When the paste mixture is turning a little rust color (just about a minute of stirring), add the can of tomatoes.
- 6. Salt and pepper the sauce and squeeze a tiny bit of lime in it. Now just stir it together to let it cook together.
- 7. When the squash is done (be careful the outside is very hot, you can use a towel to hold it) use a fork to get the meat out and just dump it straight into the pan with sauce.
- 8. Stir it all together completely coating the squash with the sauce.
- 9. Cook it on low for just a little while so the flavors get all good together.
- 10. Serve and Enjoy!
