Lasagna Bolognese

One of my favorite dishes to cook in the fall is lasagna. It’s really one of the most versatile comfort foods because you can make it with a delicious meats sauce or opt to make it just veggies and cheese. Picture yourself curled up on the couch watching some TV with a delicious slice of lasagna to devour! Just thinking of it makes me want to head home and whip up a batch! Enjoy!

Ingredients
  1. 4 jars of your favorite spaghetti sauce
  2. 3 pounds fresh ricotta cheese
  3. 3 large egg yolks
  4. 1 cup grated Parmesan cheese
  5. 1 tablespoon plus 1 1/2 teaspoons coarse salt
  6. 1/4 teaspoon freshly ground black pepper
  7. 2 tablespoons extra-virgin olive oil
  8. 1 pound uncooked lasagna noodles
  9. 2 pounds fresh mozzarella cheese, shredded
  10. 2 pounds sharp cheddar cheese, shredded
  11. 1 pound of ground beef
Instructions
  1. 1. In a large bowl, whisk together ricotta, egg yolks, Parmesan, 1 1/2 teaspoons salt, and black pepper. Place the filling in the refrigerator until ready to assemble the lasagna. Preheat oven to 400 degrees.
  2. 2. Cook ground beef in a medium skillet until meat is completely done. Be sure to season according to taste with salt and pepper. Drain.
  3. 3. Boil a large pot of water, adding olive oil and salt once ready to place in the lasagna noodles. Place the noodles in the boiling water and cook about 3 minutes less than the instructions indicate on the package. While noodles are cooking, warm up the four jars of spaghetti sauce in a large sauce pan.
  4. 4. Butter an 11-by-14-by-3-inch lasagna baking pan. Spread about 2 cups of sauce on the bottom of the prepared baking dish. Place a single layer of lasagna noodles over the sauce, overlapping them slightly. Spread about half of the ricotta filling mixture over the noodles and then place the ground beef on top of the ricotta, and sprinkle a layer of mozzarella and cheddar cheese on top. Then, place 3 cups of sauce over the entire layer.
  5. 5. Top with a layer of lasagna noodles, again slightly overlapping them. Repeat with more sauce, ricotta mixture, ground beef, and cheeses. Top with a final layer of lasagna noodles. Spread a layer of sauce over the noodles, and finish with a layer of shredded mozzarella and cheddar cheeses.
  6. 6. Bake for 1 hour. Cover with aluminum foil if the cheese starts to brown too early. Let the lasagna stand 10 minutes before serving.
