JANE’S Collard Greens

If there is one thing you should know about me it’s that I love my greens! Ever since I can remember, my mom would make Greens for special occasions, which meant as a young girl I was only having them twice a year. The funny thing is I never asked my mom how to make them. I had watched her do it so many times that I was like hmm let me see if I can do this myself! So, I did a little research, and also used what I remember my mom doing and I created the easiest and most SLAMMING greens recipe! I have had many a girlfriend ask me for the recipe and even my Mom noted that they were very good! That compliment was HUGE because lets face it, in 2013 there are certain staple soul food items a girl needs to know how to make and collard greens is definitely one of them!   1. 1/4 cup olive oil
  2. 1 smoked turkey leg
  3. 2 onions chopped
  4. 1 carton (32 oz) Chicken Stock
  5. 2 pkgs (16 oz each) packaged clean + cut collard greens
  6. 1/4 tsp sea salt
  7. 1 tsp ground pepper
  8. ¼ tsp red pepper flakes
  9. 1/4 cup sugar
  10. 2 Tbsp Apple Cider Vinegar
  1. 1. Add oil to pot and onions. Add 1 drumstick to oil; cook about 3 min, moving it around in pan to flavor oil and brown the skin. Stir occasionally, about 4 min, until onions are soft and slightly browned.
  2. 2. Add stock, sugar, vinegar, sea salt, pepper, and red pepper flakes; bring to a light boil. Remove from heat.
  3. 3. Place drumstick in slow cooker and carefully pour stock into slow cooker. (You cook stock on stove and then add to slow cooker to be able to wilt greens faster)
  4. 4. Add first package of collard greens, submerging with tongs until slightly wilted. Then add second package greens.
  5. 5. Cover and cook on LOW 4-5 hours or HIGH 2-4 hours.
  6. 6. Carefully remove drumstick, and cut meat into bite size pieces, and then return meat to slow cooker. (meat should easily pull away from bone)
  7. 7. Cover; cook on LOW 30 min. Season to taste with salt and as needed
  8. 8. Serve and Enjoy!
