Gruyere Bacon Mac and Cheese

Mac and cheese is a favorite of so many people because it’s delicious and you can’t go wrong with cheese! Add in bacon and you’ve just kicked it up a notch (yes, that statement was Emeril-inspired). This dish is super easy to make and is sure to put a delicious twist on a classic favorite.

Ingredients
  1. 8 ounces of elbow macaroni (about half a box)
  2. 6 slices of Applewood smoked bacon, diced
  3. 1 ¼ cups shredded gruyere cheese
  4. ½ cup grated Parmesan
  5. 2 ½ cups of heavy whipping cream
  6. 4 cloves garlic, minced
  7. 2 tablespoons fresh chopped thyme
  8. Salt and paper, to taste
Instructions
  1. 1. Cook pasta according to package instructions. Drain and set aside.
  2. 2. Over medium-high heat, use a large skillet to cook bacon. This should usually take about 5 minutes. Transfer bacon onto paper towels to drain the fat.
  3. 3. Using a medium saucepan, combine garlic, heavy cream, and thyme over medium heat. Bring to a boil and reduce the liquid to approximately half (about 5 minutes).
  4. 4. Add cheese, small handfuls at a time, and mix well until it’s adequately blended into the sauce.
  5. 5. Add pasta and bacon and let the sauce simmer for approximately 2 minutes.
