Fish + Grits

While getting my Betty Crocker on in the kitchen, I learned to experiment with new things. I originally prepared this dish because they were the only ingredients available in the fridge and I just thought… hmm let’s try something different. It’s sort of a twist on the old traditional shrimp and grits recipe. I eat fish 3-4 times a week and have a weakness for creamy cheese grits so it was a perfect combination. I had no idea it would turn out so well and my Husband LOVED it! I hope you find this dish easy and delicious. Let me know your thoughts!

Sautéed Peppers & Onions w/ Garlic Parmesan Swai over Cheddar Cheese Grits

Ingredients
  1. Fish
  2. 1 medium onion
  3. 1/2 orange bell pepper
  4. 1/2 red bell pepper
  5. Garlic salt
  6. Salt/pepper to taste
  7. Lawry’s season salt
  8. 2 pieces of Swai (or tilapia)
  9. 2 Tbs olive oil
  10. Grated Parmesan Cheese
  11. -----------------------------------
  12. Cheese Grits
  13. 2 Servings Grits (Quick 5 Min Grits to decrease cook time)
  14. Carnation
  15. Sharp Cheddar Cheese (shredded)
  16. salt/pepper to taste
  17. 2tbsp butter
Instructions
  1. 1. Season Swai (or Tilapia) on both sides and set aside. Make sure fish has no extra moisture.
  2. 2. Add olive oil to skillet and turn to medium-high. Then add chopped peppers and onions. Lightly season with garlic salt and pepper. Allow to lightly soften while tossing in olive oil.
  3. 3. Move vegetables to the right and left of skillet and place fish in the middle. Cover with lid and allow to cook on each side for 5-7 mins or until cooked through.
  4. 4. While fish is cooking, begin grits. Follow directions listed on package but replace half of water portion with carnation.
  5. 5. As grits begin to thicken add salt/pepper to taste, butter, and cheese. Continue to mix to ensure it does not become lumpy.
  6. 6. To serve, place grits on center of plate and then add fish, peppers, and onions on top and voila!
  7. 7. Bon Appetit!
