Easy Cabbage

Maybe it’s the Irish within but I LOVE me some cabbage! I recently created this recipe using my collard greens recipe for a St. Patrick’s Day dinner I made for the hubs and I. I also added carrots to the dish and it made it even BETTER! If you like a nice, easy, and healthy side that can last a few days with any type of meat, then this is the side for you! It is great with fish, chicken, or beef! Make sure you let me know your thoughts and how the dish came out.

  1. 1 head of cabbage (coarsely chopped)
  2. 10 carrots (ends cut off and coarsely chopped)
  3. 1 large yellow onion (sliced)
  4. 1 32 oz Chicken Broth* (4 cups)
  5. 2 tablespoons sea salt
  6. 1 teaspoon pepper
  7. 1/8 cup of olive oil
  8. 1/2 cup of brown sugar
  9. 2 tablespoons apple cider vinegar
  10. 1 teaspoon red pepper flakes
  1. 1. Fill pot with chicken broth, sliced onion all spices, oil, and vinegar. Place on stove and turn on to medium heat.
  2. 2. Once broth starts to boil, add carrots and cabbage.
  3. 3. When mixture starts to boil again, cover and cook on low/medium for 1 hour; or until cabbage is tender and translucent in color.
  4. 4. Transfer to serving dish and enjoy!
  1. *Feel free to use water if you like.
