Creamy White Cheddar Mac and Cheese


If there is one thing I love its MAC and CHEESE! I mean how could you not? As I have been getting to know more about the world of cheese, courtesy of frequent visits to Wegmans, I have discovered I prefer my cheddar white. Even though I know that the yellow cheddar tastes the same and  it just boils down to aesthetics, I just prefer the white cheddar now. Perhaps because its feels more elevated than your standard yellow cheddar. I know that my hubby would not be pleased since he’s a cheese head and is always on his GO PACK GO ish, but that didn’t stop him from helping himself to several helpings of my new recipe. The key to this mac and cheese is the cream cheese and heavy cream that gives it the perfect melt in your mouth I want to curl up by the fireplace and go to sleep texture ever!   1. 2 cups dry Elbow Macaroni (4 cups cooked)
  2. 2 cups shredded extra-sharp white cheddar cheese
  3. 1/2 cup cream cheese
  4. 1/2 cup heavy cream
  5. salt & pepper to taste
  1. 1. Preheat oven to 350 degrees
  2. 2. Cook pasta till al dente and drain
  3. 3. In same pot while noodles still hot, add cream cheese and let sit covered for a few minutes so cheese can melt.
  4. 4. Add heavy cream and sharp white cheddar cheese (reserve a little to top with)
  5. 5. Pour mixture into greased baking dish
  6. 6. Bake for 30 mins
  7. 7. Let cool for 10 mins
  8. 8. Serve and Enjoy!
