Chocolate Chip Walnut Coconut Cookies

If Jackson is anything like his Daddy, he’s going to love a good cookie. Having said that, these cookies are as good as they get! One of my favorite things about the weekend is kicking back, hanging with my little guy and baking some of his future favorites.

Ingredients
  1. 1 cup margarine
  2. 3⁄4 cup brown sugar
  3. 3⁄4 cup sugar
  4. 2 eggs
  5. 1 teaspoon vanilla
  6. 2 1⁄4 cups flour
  7. 1 teaspoon baking soda
  8. 1⁄2 teaspoon salt
  9. 1⁄8 teaspoon baking powder
  10. 1 cup chocolate chips
  11. 1⁄2 cup rolled oats
  12. 1⁄2 cup shredded coconut
  13. 1⁄2 cup chopped walnuts
Instructions
  1. 1. Cream together the softened margarine, sugars, egg replacer, and vanilla.
  2. 2. In a separate bowl, mix the flour, salt, baking soda and baking powder.
  3. 3. Add this to the creamed mixture.
  4. 4. Stir in the remaining ingredients.
  5. 5. Drop by spoonful onto an ungreased cookie sheet and bake at 375° for 14 minutes.
  6. 6. Turn sheets around halfway through baking (and switch racks too, if baking more than one sheet at a time).
  7. 7. Cool well before removing from sheet.
