Chicken Corn Chowder

I LOVE Chicken Corn Chowder! I have tried to make it before and it was a disaster! I happened to be chatting with my cousin one day and she told me about the awesome Chowder she had made. She attended culinary school so I figure she knows her stuff! So she sent over the recipe and I tested it out and it was so awesome I  had to share! It’s super simple but I hope you enjoy it as much as I did! Happy Cooking!

  1. 3 tbs butter
  2. 4 cooked and seasoned chicken breasts or thighs, diced
  3. ½ onion, small diced
  4. 1 ½ cups corn, fresh or frozen
  5. 3 slices bacon, diced
  6. 1/3 cup flour
  7. 3 medium sized russet potatoes, small diced
  8. 32 oz. chicken broth
  9. 3 cups milk
  10. Salt and Pepper to taste
  11. 1 ½ tbs Dried Thyme
  1. 1. In large pot or crockpot, over medium heat melt butter, add bacon and sauté until half done, add onions and corn and cook until onions are translucent. Season with salt and pepper as you cook.
  2. 2. Add flour and cook until a light to medium brown color, while stirring constantly.
  3. 3. Slowly pour chicken broth while whisking until the flour is dissolved and there are no lumps.
  4. 4. Turn the heat down to a low simmer and add the potatoes, chicken, thyme and milk.
  5. 5. Let simmer for at least 2 hours. Periodically stir, taste and season if necessary.
  6. 6. Serve and Enjoy!
