Cheesecake Tarts

I love cheesecake! But, I’m very picky about it. I am not big on baked cheesecake either BUT I do like a slice or two from the Cheesecake Factory. SUE ME, but their Pineapple Upside Down Cheesecake is my FAVE!!! However, I love my grandmother’s simple no bake recipe! It is very easy to make and it is always a hit at little parties my husband and I host and at work functions. If you try these darling little tarts, I assure you everyone will be praising you after the first bite!! Make sure to leave me some and let me know how your tarts turned out!!

  1. 1 block of cream cheese (room temperature)
  2. 1 can condensed milk (eagle brand)
  3. 1/3 cup lemon juice
  4. 1 teaspoon vanilla extract
  5. 2 packages of tart crusts (12 total)
  1. 1. Blend cream cheese, lemon juice, and vanilla extract together in a bowl with a mixer. Mixture should be thick and creamy.
  2. 2. Fold in condensed milk. Then blend for 5 seconds with mixer. (make sure to not overblend or mixture will not stiffen)
  3. 3. Fill each tart crust with the mixture until full.
  4. 4. Place tarts in fridge and allow them to set for 2hours.
  5. 5. Garnish with fruit of your choice if wanted.
  6. 6. Serve and enjoy!
