Beef and Spinach Pasta Bake

This beef and spinach dish is one of my favorites because it only takes 30 minutes to make and is delicious every time! Another benefit is that there will be plenty of leftovers, so you can have it for lunch the next day or you can have it another night during the week for dinner. I hope you enjoy.

Ingredients
  1. 1 lb. ground beef (80/20 works best)
  2. 10 oz. package of frozen spinach, thawed and strained
  3. ¼ cup parmesan cheese
  4. 3 cups of uncooked rotini pasta
  5. 2 jars of tomato sauce (use can also use your favorite pasta sauce)
  6. 2 bulbs of fresh garlic, chopped
  7. 1 sweet onion, diced
  8. 2 cups of shredded mozzarella cheese
Instructions
  1. 1. In a large skillet using medium heat, begin cooking the ground beef, diced onions, and garlic until the meat is thoroughly cooked. After placing the ground beef, onions, and garlic in the skillet, start the rotini pasta (this should take about 7 minutes for al dente).
  2. 2. Once the beef is completely cooked, add spinach, parmesan, and tomato sauce to the skillet. Cook until heated through.
  3. 3. Preheat oven to 350F degrees.
  4. 4. Add cooked pasta and mix until evenly distributed.
  5. 5. Pour pasta mixture into a non-stick 9 x 12 casserole dish.
  6. 6. Add mozzarella cheese generously on top.
  7. 7. Bake for 15 to 20 minutes.
