ANN’S Down South Mac and Cheese

Now, this is by no means meant to disrespect the many domestic divas out there, but not many people know how to make some REAL mac and cheese. I’m talking about the stuff that sits in a casserole dish on Thanksgiving and Christmas that you know will make your jeans a little tighter come summertime! There are a lot of mac and cheese recipes out there and I have tried several myself. What I find is that they always look good fresh out the oven, but taste dry and kinda crunchy around the edges after it cools down. This is undoubtedly because of all the cheese and heat. What I’ve done is taken elements found in my family’s recipe, although not everything because my mother threatened my life, and made it creamier and a dish that I could eat days later that contained the same delicious moisture.

Ingredients
  1. 2 cups of dried elbow macaroni (4 cups cooked)
  2. ½ cup grated sharp cheddar
  3. ½ cup grated Gouda
  4. ½ cup grated mozzarella
  5. ½ cup grated Swiss
  6. 1 cup of sour cream
  7. 6 tablespoons butter
  8. 3 eggs
  9. ½ tsp. salt
  10. ½ tsp. pepper
  11. 1 ½ cups of heavy whipping cream
  12. Non-stick spray
Instructions
  1. Preheat oven to 350 degrees F.
  2. 1. In a large stockpot, bring 6 quarts of water to a boil for the macaroni noodles. Make sure to season the water with salt. Cook until al dente…usually about 8 to 10 minutes.
  3. 2. After macaroni is cooked, drain the pasta and place in a large bowl and while pasta is still hot, add all the cheese. Now keep in mind the noodles are hot, so wear some gloves and proceed with caution.
  4. 3. In a separate medium bowl, combine the sour cream, butter, eggs, salt, pepper, and heavy cream together and mix well. Then add this mixture to the macaroni mixture in the large bowl. Remember, noodles may still be hot.
  5. 4. Spray 9 x 13 or casserole dish with non-stick spray and pour macaroni mixture into the baking dish.
  6. 5. Bake for 35 minutes…this time depends on your oven, but works for most folks.
  7. 6. Remove mac and cheese from the oven and place additional cheese on top (your fave will do just fine) and let cool for 10 minutes.
